CATALAN CHICKEN WITH PINE NUTS, DRIED APRICOTS AND PLUMS

This week I shall give you the recipe for a chicken that my daughter Mireia cooks like an angel ...

Ingredients for 6 people:
- six whole boneless chicken thighs
- 2 bags of pine nuts
- 2 bags of plums
- 2 bags of dried apricots
- 4 sour apples
- 1 large onion cut into julienne
- 3 tomatoes cut into pieces
- thread
- half a glass of brandy
- half a glass of dry sherry
- half a glass of water 
- salt and pepper
- aromatic herbs
- olive oil

First, you get the boneless chicken thighs and you stuff them with pine nuts, plums and apricots. Then you roll and tie them with thread.
Afterwards you put salt, pepper and aromatic herbs and you cook them in a pan with olive oil.
After one adds onion, cut into julienne, tomatoes into pieces and sour apples also cut into pieces. You sprinkle with brandy and dry sherry and you add a little water. Let it simmer to go by xup xup ... 40'
Once it is cooked you add the remaining pine nuts, apricots and plums and you leave it 15 minutes more.
