SALMOREJO WITH GREEN ASPARAGUS (starter)

Last week I went to eat at home my daughter Mireia and she made a very good first: green asparagus salmorejo. 
I asked for the recipe and as is a delicious dish, today I give you in the case that you want to make it this summer.

Ingredients for 4 people:
- 1 bunch of green asparagus
- bread (4 big pieces)
- water boil asparagus
- 1 peeled garlic, blanched 3 times
- white wine vinegar
- olive oil
- salt and pepper





Preparation:
Once you get bunch of asparagus, cut the tips, washing it with cold water. Then put them in the pot with cold water. When it starts to boil water you count 3 minutes and shut the fire.
In a saucepan and on the water of boil the asparagus, add 4 large pieces of bread.
In a blender, put asparagus, bread soaked, some water of the asparagus, garlic previously blanched 3 times, a splash of white vinegar and another of olive oil, salt and pepper to discretion.
Once beaten all, have to be thick, put all in a bowl.
Afterwards, cut small dice ham and white Burgos cheese.
The salmorejo has to be cold. Put it in the fridge before eating for 1 hour.
It is an ideal plate to do it as first dish when you have guests.
