IBERIAN HAM CROQUETTES :

Today a dish that it likes much at all, especially our children and guests ...

Ingredients :
- 300 grams. Iberian ham, can be cut taco chips or very small
- 2 medium onions
- 300 grams. of flour
- 1 liter of milk (it can be semi-skimmed)
- 30 grams. of butter
- Oil
- Salt, pepper, nutmeg
- 3 whole eggs
- Flour cookie

Once you get a pan and melt butter.
Then one adds onion, finely chopped and you let it brown. You add the flour and remove everything with a wooden spoon. You add the milk gradually, stirring constantly until a smooth paste. Put salt and pepper (very little salt) and a little grated nutmeg. Here you mix the iberian ham and stir all with the spoon. Leave it to cook for about 2 or 3 minutes. You can try the dough for its texture and flavor ...
The paste will have to be thick, because it has cooled will have to proceed to the croquettes.
Normally I usually do it the day before and keep it in a covered dish with plastic wrap in the refrigerator.
The next day, in a bowl I beat 3 eggs and in a shallow dish I put the flour cookie. 
In a frying pan add oil and when is hot, proceed to make croquettes wrapping up first with the beaten egg and then passing them through flour cookie.
The cold in the hot pan with olive oil.
Then I put on a plate with paper towels underneath to absorb the oil.
They are eaten hot.
In the event that you leftover you can save them in a taper in the fridge. Before eating hot it in the microwave.
They can also make with chicken or beef, to consumer tastes.
