Today a starter, simple and good ...
Ingredients for two people:
- 2 bunches thick and tender asparagus of Navarra
- water
- salt
- sugar
Take 1 bunch white natural asparagus per person.
We will take the bunch and cut the tails -some three fingers-
We will wash thoroughly with water to remove all the sand.
We will peel one by one and we will put them in a saucepan with cold water.
We put a handful of salt per two of sugar.
When the water starts boiling you must count 20' cooking.
You can accompany with a good mayonnaise or a
vinaigrette (salt, pepper, olive oil, vinegar and mustard)
Pls. do not overdo the cooking time (maximum 20') if not they would be hard...
They can be eaten hot or cold according to taste...
